SPICY MASHED POTATO PIE
 
 
If there was ever any one thing that could be said about a quick and easy recipe. I would venture to bet the majority of people would like a pot meal. You know...a meal that serves as the entree, the veggie, the starches and so forth.
 
As a child growing up I remember the Mashed Potato pie. Now my tastes buds requires a little
spice. So I came up with this recipe. I hope that you enjoy. Please leave any comments about it.
 
 
SPICY MASHED POTATO PIE

 
3# Ground Beef
4 TBS Sugar
3 TBS Paprika
1 TBS Garlic Salt
1 TBS Salt
1 TSP Cayenne Pepper
1 TSP Lemon Juice
1/2 Lrg Onion (Diced)
1/2 Cp Mushrooms
(1) 14.5 oz. can Green Beans

 
SAUCE
4 TBS Butter
4 TBS Flour
4 Cup Milk
1 tsp Nutmeg

 
Potatos
2 Boxes Instant mashed potatos

 
Garnish
2 TSP Parsley Flakes
(1) 6 oz box French Fried onions


 
1) Mix sugar, paprika, garlic salt, salt, and cayenne pepper in a bowl. When thoroughly mixed take out 1 1/2 TBS and set aside for later use. Put ground beef in mixing bowl add spice mixture and knead until spices are mixed into ground beef.

 
2) Brown ground beef in warm skillet. While browning ground beef, saute’ onions then add mushrooms. Add onions and mushrooms and the green beans to the ground beef. Add the lemon juice and mix. Turn heat down on low.

 
3) In a saucepan melt butter whisk in the flour. Continue whisking until flour mixture turns a chestnut color. While continuing to stir, slowly add the milk and the nutmeg. Use the 1 1/2 tbs of spice mixture that you set aside and season to taste. Continue stirring until the sauce become creamy with no flour lumps.

 
4) Add sauce to the ground beef and stir a few times to mix. Reduce until the sauce thickens.

 
5) Make potatos according to directions on box. Make sure potatos are creamy. If thick add milk until they are creamy.

 
6) In a casserole dish add ground beef and even out. On top of ground beef add the mashed potatos and smooth out. Sprinkle parsley flakes around on top then place some of the french fried onions around the top of the potatos.

Zesty Chicken Noodle

I get frustrated when it comes to quick and easy recipies. The recipee calls says 15 minutes for the prep and 30 minutes to cook. You know what I mean, it gets frustrating. You get going on the recipee and the baby starts crying, the phone rings, someone is knocking at the door. All kinds of interuptions are bound to happen. Your prep time goes from 15 minutes to 40 minutes.
 
Another thing is they may be more on a caffeine high than what I am. I dislike it when it states the time. However, there is one good thing about the time. I know it has to be some what quick if it states 15 minutes. So instead of trying to time myself to their schedule...I work at my own pace.
 
Such was the case in this recipe. It was a challenge to come up with two original recipies in which we came up with. My only regret is that I didn't have a camera to take a picture of it. But the ones that I cooked it for came up for seconds, some for thirds, and one or two for fourths. So I figured I hit the jackpot.
 
One suggestion is that served it I made some mashed potatoes and spread it over the mashed potatoes with a tossed salad on the side. So here is a quick and easy chicken recipee and I welcome our comments and I hope you enjoy.
 
 
Zesty Chicken Noodle
(American Cuisine)
12 Servings

 
3 # Chicken Breast
4 Tbs Sugar
2 Tbs Paprika
2Tbs Thyme
2 Tbs Garlic
1 Tbs Salt
1 Tbs seasoning Salt
1 tsp Cayenne Pepper
3/4 tsp Canola Oil
4 cups milk
4 Tbs butter
4 Tbs flour
1 large onion diced
1/2 cup chopped mushrooms
1 box elbow noodles
1 Tsp minced cilantro
1 red bell pepper julienne cut

 
1) Mix sugar, paprika, thyme, garlic, salts, and cayenne pepper in a bowl.
Take 1 tablespoon of season mix and set aside for later use. Dry rub season mix into chicken breast and marinade for 1 hour.

 
2) Saute onions until carmalized then add mushrooms.

 
3) Melt butter in saucepan under low heat. While whisking add flour continue whisking until mixture is chestnut brown. Slowly add milk while continuing to whisk until mixture is creamy. Using the 1 tablespoon of spice mixture season to taste.

 
4) Add diced chicken breast to creamy sauce then add onions and mushrooms. By simmering, reduce sauce until desired consistency is achieved. Add noodles and cook until noodles is done. Approximately 7 to 8 minutes.

 
5) Remove from heat pour in casserole dish and garnish with cilantro and bell pepper.

 
Serving suggestion: serve over mashed potatoes.

Due to Culiniary School and cooking gigs, it has been a litle difficult to scheule my time to the blog.
I hope that this will be changing and I should be posting more now.

QUICK EASY TUNA FISH CAKES

Yes, fish sandwiches can be had by the ever popular "Mickie D", But you can make these at home as a quick easy meal. I would also like to add they are a very tasty meal. Below is a recipe I found at All Recipies.

When your cupboards are bare, this is an easy way to make economical tinned tuna taste less like, well... tinned tuna. You can make these tuna cakes for dinner and enjoy leftovers for lunch. Try them in pitta bread for a fab sandwich filler.

Ingredients

Serves: 2
  • 1 (170g) tin tuna in water, drained
  • 1 egg
  • 60g porridge oats
  • 3 tablespoons barbecue sauce
  • 3 tablespoons chopped spring onion
  • 1/2 teaspoon hot sauce, or to taste
  • 1/2 teaspoon dried thyme
  • 1 pinch salt
  • 2 tablespoons vegetable oil

Preparation method

Prep: 5 mins |Cook: 10 mins
1. In a medium bowl, stir together the tuna, egg and oats until blended. Mix in the barbecue sauce, spring onion, hot sauce, thyme and salt.

Heat the oil in a large frying pan over medium heat. Spoon tablespoonfuls of the tuna mixture into the pan, and flatten slightly. Smaller cakes hold together better. Cook until browned on each side, about 3 minutes per side.

This recipe turned out pretty good but I had to make a few minor changes. I used 1/2 cup bread crumbs bread crumbs in place of the oats. I also used white onions. I added a few extra spicesnot mentioned above. I couln't help it I enjoy things with a little kick. I added a 1/2 teaspoon of cayene pepper.
